Serves 6
- 6 chicken thighs or breasts
- 1 TB butter
- 1 jar apricot jam
- 3 sliced green onions
- 1/2 tsp dried mustard
- 1 1/2 TB apple cider vinegar
- Salt and pepper
- Melt butter and saute chicken about 5 minutes per side. Season with a little salt and pepper.
- Add jam, onion, mustard and vinegar to a pan, cover and simmer for 3-4 minutes until it slightly reduces. Turn off.
- Add chicken to mixture.
