Serves 6

  • 6 chicken thighs or breasts
  • 1 TB butter
  • 1 jar apricot jam
  • 3 sliced green onions
  • 1/2 tsp dried mustard
  • 1 1/2 TB apple cider vinegar
  • Salt and pepper
  1. Melt butter and saute chicken about 5 minutes per side. Season with a little salt and pepper.
  2. Add jam, onion, mustard and vinegar to a pan, cover and simmer for 3-4 minutes until it slightly reduces. Turn off.
  3. Add chicken to mixture.
