- 2 cups cooked beans
- 1 cup cooked corn kernals
- 1 red bell pepper chopped
- Generous handful chopped green onions
- 2 Tbsp. lemon juice
- 1/2 tsp. cumin
- 1/2 tsp. ground mustard
- 1/8 tsp. red pepper flakes
- 1/2 tsp. salt
- Combine beans, corn, bell pepper and green onion together in a bowl.
- In a small bowl or ramikan, combine lemon juice, cumin, mustard, red pepper flakes and salt and mix.
- Add mixture to the large bowl and mix.
