Cheri’s Curry Chicken Salad

  • 3 cups cooked sliced chicken breasts or thighs
  • 1/2 cup sliced celery
  • 1 cup grapes
  • 1/2 cup cashews
  • 2 Tbsp. chopped red onion
  • 1/2 cup soy free mayo
  • 1 tsp. lemon juice
  • 1/2 tsp. worchestire sauce
  • 1/2 tsp. curry powder
  • Salt and pepper to taste

 

  1. Combine chicken, celery, grapes, cashews and red onion in a bowl.
  2. Combine mayo, lemon juice, worchestire sauce and curry powder in a small bowl or ramikan and mix.
  3. Pour mixture into large bowl and add salt and pepper to taste.
