Cottage Pie

  • 1 yellow onion chopped
  • 4 cloves garlic minced
  • 2 large carrots chopped
  • 1 zuchinni diced
  • 1 yellow zuchinni diced
  • 2 tsp fresh rosemary
  • 2 tsp thyme
  • 2 lb. ground lamb (If you are having trouble finding ground lamb, you can purchase it here)
  • 2 medium sweet potatoes
  • 1 cup grated goat or sheep cheese
  • 2 Tbsp. grass-fed butter
  • Salt
  • Pepper
  • Fresh parsley

 

  1. Place sweet potatoes in the oven at 425 for 45 minutes.
  2. Saute onion, garlic, carrots and zuchinni in a pan with olive oil until soft. Turn off heat once cooked.
  3. In a separate pan, add the ground lamb, rosemary and thyme and cook until done. Add salt and pepper to taste.
  4. Transfer lamb to the vegetables including all the juices.
  5. Remove sweet potatoes from the oven and spoon out into a bowl. Add butter and 1/2 the cheese and mix until creamy.
  6. In a glass pan, add vegetables and meat mixture. Then put the sweet potatoes on top with the remaining cheese.
  7. Broil for 10 minutes. Take out and add fresh parsley.
