Ingredients
1 onion diced
1 carrot sliced
1 celery stalk chopped
1 whole chicken
1 TB oregano
1 TB thyme
1 tsp salt
1 TB lemon zest
2 garlic cloves minced
Pepper
Water
Topping
1-2 cups button mushrooms
1-2 TB Ghee, butter or olive oil
1/2 cup kalamata olives
1/2 cup pine nuts
1/3 cup capers
Broth from Crockpot
Add onion, carrot and celery to Crockpot, and then add water about 2 inches high. Add chicken.
Put oregano, thyme, salt, lemon zest and garlic in a small bowl, mix and spread over chicken. Sprinkle with pepper.
Cook for 8 hours.
When finished, sauté mushrooms and toast pine nuts. Slice chicken, and add mushrooms, olives, pine nuts, and capers. Top with a spoonful or so of the chicken broth from the Crockpot.
