Homemade Hash Browns

8 medium Yukon gold potatoes
Ghee, coconut oil or bacon fat
Salt and pepper

Slice the potatoes into thin matchsticks and add to ghee, coconut oil or bacon fat. The best results comes from bacon fat saved from making bacon (pastured, nitrite free). Stir constantly over medium heat until they are a nice brown. Season with salt and pepper
