Rack of Lamb with Au Jus sauce (the easy way)

This recipe is for a 1.5lb cut, so the cooking time may need to be adjusted for bigger ones.

  • 1.5lb rack of lamb
  • Olive oil
  • Oregano
  • Salt
  • Pepper
  • 2 garlic cloves minced
  • 1/4 cup red wine

 

  1. Preheat the oven to 350.
  2. Place the lamb in a glass dish that has a lid. Sprinkle liberally with salt, pepper and oregano. Drizzle with olive oil and minced garlic cloves, and rub evenly. Pour wine in the dish and place the lid on top. If you don’t have a lid, use foil.
  3. Bake at 350 for an hour.
  4. Remove the lamb from the oven and use a sharp knife to cut each individual piece. Pour the liquid into a small bowl and use as the Aus Jus sauce for dipping.
