Smoked Salmon Salad with Apples, Carrot and Goat Cheese

Here is a quick meal that you can put together in the morning when you need to take your lunch.

  • 2 oz wild smoked salmon (cut into small squares)
  • Salad greens
  • Raw goat cheese(cut into cubes)
  • 1/2 apple chopped
  • 1 carrot grated
  • 1 piece sourdough spelt, sprouted bread or gluten-free bread (optional)
  • Olive oil and vinegar

 

Combine and dress with olive oil and vinegar. If using bread, toast in the oven with butter, then cut into cubes for some quick croutons. I used a pomegranate balsamic that I bought at the Olive Oil and Beyond store, highly recommend it.
