- 1 cup brown rice<
- Ghee, butter or olive oil
- 3/4 tsp turmeric
- 1 tsp coriander
- 1 cup black beans (soaked or 15 oz can)
- 6-8 Shiitake mushrooms diced
- 4 cloves garlic minced
- 2 TB sauerkraut
- 2 heads broccoli
- 4 pieces nitrite free bacon (optional)
- Place ghee, butter or olive oil in a pan at medium heat, and add brown rice. Add turmeric and coriander. Mix with a wooden spoon for 5-8 minutes. Add 2 cups of water, bring to a boil then reduce to a simmer for 45 minutes.
- Cook black beans as directed if using dried beans.
- Saute shittake mushrooms with garlic in olive oil until soft. If using bacon, saute as well.
- During the last ten minutes with the rice, add the broccoli so that it gets steamed and the beans if canned.
- Put the rice on the plate first, and add all other items as desired. Salt to taste.
