• 2 cups cooked beans
  • 1 cup cooked corn kernals
  • 1 red bell pepper chopped
  • Generous handful chopped green onions
  • 2 Tbsp. lemon juice
  • 1/2 tsp. cumin
  • 1/2 tsp. ground mustard
  • 1/8 tsp. red pepper flakes
  • 1/2 tsp. salt

 

  1. Combine beans, corn, bell pepper and green onion together in a bowl.
  2. In a small bowl or ramikan, combine lemon juice, cumin, mustard, red pepper flakes and salt and mix.
  3. Add mixture to the large bowl and mix.
