1 tablespoon olive oil
1 yellow onion chopped
3 carrots chopped
3 stalks celery chopped
1 fennel bulb chopped
4 cloves garlic minced
1 can cannellini beans
2 tsp. oregano
2 tsp. basil
2 tsp. rosemary
Pinch red pepper
8 ounces diced tomatoes
4 quarts chicken broth
4 chicken sausages sliced
1 bunch parsley chopped
Grated cheese of choice (optional)


1. Saute onions, carrots, celery, garlic, and fennel until soft.
2. Add herbs and saute for a few more minutes.
3. Add chicken broth and diced tomatoes and simmer for 20 minutes.
4. Keep simmer going and add sliced chicken sausages for 5 minutes or until cooked.
5. Add can of cannellini beans, chopped parsley, and salt and pepper to taste. Add optional grated cheese.
