This is one that I trust if you put it in front of someone, they won’t know they are eating cauliflower. The presentation is also very colorful and impressive. Easy to make and nutrient dense.

1 head cauliflower
8 sliced cherry tomatoes
2 tbsp. grass-fed butter
1 small handful chopped mint
1 small handful chopped parsley
2 oz. soft goat cheese
1 small handful bit size nori strips
Toasted sunflower seeds (optional)
Salt and pepper

1. Grate the cauliflower into a pan with 2 tbsp. butter. Turn on medium and cover. Move around as needed and keep covered for 5-8 minutes or until soft.

2. Turn off heat. Add ingredients evenly. Season with salt and pepper.
