GLUTEN FREE RECIPE

This is a family favorite!

Serves 4

Chicken:

  • 2 medium chicken breasts
  • Oregano
  • Basil
  • Salt
  • Pepper

 

“Pizza”

  • 1 onion cut into half moons
  • 1 avocado diced
  • 4 brown rice tortillas
  • 2 1/2 cups hummus
  • 1 bunch parsley chopped
  • Goat feta
  • 2 tomatoes diced
  • 2 TB coconut oil

 

For chicken:

  1. Preheat oven to 350.
  2. Sprinkle oregano, basil salt and pepper evenly on the chicken.
  3. Bake for 38 minutes uncovered. Turn off heat
  4. In another pan, add coconut oil and put in one brown rice tortilla. Lightly brown each side which should make it slightly hard like flat bread. Finish all 4.  Add olive oil and sauté onions until soft, or to caramelize sauté for 15 minutes or until slightly brown.
  5. Spread hummus for the “sauce” and add parsley, goat feta, avocado, tomatoes, chicken and onions.
