Makes 6 muffins

1 cup Pamela’s Baking and Pancake Mix
1/4 cup almond milk or rice milk
1/3 cup honey
1/4 cup walnuts (optional, ideally soaked overnight first. Cover with water, add few pinches of sea salt)
1 egg
1 tsp vanilla
1 TB flax seeds freshly ground
3 TB chia OR hemp seeds
1/2 to 3/4 cup chopped banana


Pre-Heat oven to 350
Mix dry ingredients first, then add the wet ingredients.
Place in greased muffin pan 2/3 full
Bake 18-20 minutes
