Here is a quick meal that you can put together in the morning when you need to take your lunch.
- 2 oz wild smoked salmon (cut into small squares)
- Salad greens
- Raw goat cheese(cut into cubes)
- 1/2 apple chopped
- 1 carrot grated
- 1 piece sourdough spelt, sprouted bread or gluten-free bread (optional)
- Olive oil and vinegar
Combine and dress with olive oil and vinegar. If using bread, toast in the oven with butter, then cut into cubes for some quick croutons. I used a pomegranate balsamic that I bought at the Olive Oil and Beyond store, highly recommend it.
