Oats,and Buckwheat: Cover 1 cup of oats with water, about an inch above the oats. Add 2 TB yogurt and leave at room temperature overnight. In the morning, add more water and cook until done.


Quinoa and Brown Rice: Soak for 12-24 hours using the same instructions as above.


I highly recommend buying a dehydrator if you are willing to take these steps. If your oven stays warm with the pilot light on, you can leave the nuts and seeds for 24 hours in the oven.


Almonds, walnuts, sunflower seeds and pumpkin seeds: Fill 1 mason jar 3/4 full with nuts and seeds, then cover with water. Add 3-4 tsp of salt and shake. Leave overnight. In the morning drain the water. Place in the dehydrator at 115 degrees for about 8 hours. The sunflower seeds will be done before this, but you can leave them to finish with the rest.


They should be dry, crisp and slightly salty. You really notice a big difference in taste.
